Pasta nests

These long pasta formats are dried slowly and rolled up together to recreate the traditional nest shape. The bigger formats, pappardelle and tagliatelle are produced with bronze drawing method; this pasta is rough and porous to perfectly retain the sauce. Capellini are light-colored, subtle and smoother just to enhance the delicacy and lightness of this format.
